Yes, we know how many planets there are, but what does that mean? Some math.
Let's assume that, over the course of time, a billion players play No Man's Sky. That is going to be a gross overestimate. As a comparison, Minecraft and World of Warcraft have both sold a little over 100 million copies (so a tenth of that), but let's assume that NMS somehow redefines computer game sales and manages to sell a billion over the next 5 years.
Now imagine each of those billion players visits 1000 planets. This, again, is also likely to be a severe overestimate. Dedicated players will hit this number eventually, and some will greatly surpass it, but of all the players who play the game, including those who don't like it and give up quickly, most will likely visit way less than 1000. For a minute, let's also assume there is no duplication, so 1 billion players, each visit 1000 planets meaning 1 trillion planets in total are visited.
So imagine you are currently living in a cave and you emerge in 5 years time to discover this game No Man's Sky that has sold a billion copies and a trillion different planets have been visited. You buy the game in a Steam Sale for $4.99 and start playing. For every planet you visit in the game, there will only be a one in eighteen thousand (18 quadrillion/1 trillion) chance that this planet has been visited before. That's already pretty damn unlikely (and, even using our grossly unrealistic numbers, higher than the 99.99% quoted by Sean). And that's only the chance that the planet has been visited before, ever, in the history of the game. The chance that there is a player on that planet at that given moment is magnitudes smaller than that! Assuming each player spent a whole day on each planet they visited (again, a massive overestimate if every player is visiting 1000) that means that if someone has visited the planet, the chance of them being there now (assuming a uniform distribution of players over that 5 years) is around 1 in 2000, combined with the 1 in 18 thousand above meaning that when you visit a planet there will be about a 1 in 36 million chance there is someone else already there. That's more unlikely than winning the lottery.
And that is just on the planet... somewhere! Imagine both players are standing on a high spot where they can see 10km in each direction (so around 300 square kilometers in all) and imagine their graphics settings are somehow good enough that they could see the other player if they were anywhere within that 300 square km. Assume the planet is around the same size as Earth (about half a billion square kilometers) that means there is only a 1 in 1.7 million chance that they could see each other. Combine that with the figure above, if you land on a planet, find a high point and look around, there will be about a 1 in 61 trillion chance that you will be able to see another player. So anyone who thinks that 'chance encounters' in this game will happen are really kidding themselves. Think about all the wildly unrealistic assumptions we have made to this point (1 billion copies sold, every player immediately rushes towards the middle, visits 1000 planets when they get there, spends a day on each, and can pick out a player 10km away) and we are still left with a 1 in 61 trillion (about the odds of winning the lottery two weeks consecutively) chance of encountering another player when you explore a new planet. It might happen to someone... somewhere... at some point. And you had better hope they have the presence of mind to realise how rare their experience really was and get a video of it.
If you deliberately try to find other players by following breadcrumbs and spending a lot of time online hanging around in likely locations, you may get this number down a bit. And obviously if you and a friend deliberately head to the exact same coordinates in the world you could probably find each other. And maybe at the very middle of the galaxy, whatever is there (I don't want spoilers) there will be things so important to the game that a lot of people will gravitate to that one specific point.
But realistically, barring coordinated meets, this is a completely single-payer game. However, I for one actually look forward to it in this day and age where developers feel every experience has to be multiplayer. Knowing millions of other people are 'out there' but at the same time being almost certain you are, to all intents and purposes, alone should be a unique and fulfilling experience.
